Simple, original, delicious, perfect for tea time...2 cups flour
3/4 cup sugar
3/4 teaspoon baking powder
1/2 teaspoon salt
2 eggs
3/4 cup milk
2/3 cup vegetable oil
1 1/2 cup strawberries -- hulled and chopped
4 tablespoons fresh mint -- chopped
1- Preheat oven to 400 degrees. Butter and flour medium muffin cups. Discard excess flour.
2- Sift flour, sugar, baking powder and salt into a large bowl and make a well in center.
Add egg mixture to well and stir with a whisk until mixed. Do not over-mix or bread will be heavy. Stir in strawberries and mint.
3- Pour into muffin cups and bake 20 to 25 minutes until done.
