This traditional Haitian dish is my favorite kind of rice. It is absolutely delicious, tasty and very easy. The flavor is so unique. Everytime I cook it for my guests, they ask for more! You really have to try it!Serves 6 People
- 2 cups of long grain rice
- 1 cup of red kidney beans
- 4 or 5 cloves garlic, crushed
-1 ounce of salt pork cut into small cubes
-1 chopped green pepper (hot)
- salt, to taste
-2 tbsp vegetable oil
Fry the salt pork in a non-stick pan until crisp then add the garlic and chilli.
Add the beans (save the water!) and season with salt to taste.
Transfer the bean mix to a large pan. Measure the reserved liquid from the beans, and add enough water to make 4 cups. Bring to a boil over high heat then stir-in the rice. Return to a boil, then lower heat to medium-high and cook uncovered until liquid evaporates.
Cover the pan tightly and cool on low setting for 20 minutes.
